It is not possible to undo a banking process. However, you can modify the bank date of a transaction to read 00/00/00 - which basically tells StorMan that the transaction hasn't been banked yet.
Once a transaction doesn't have a date banked, it essentially becomes "un-banked" and it will appear in the banking process (more on the banking process: #BNKBPR01) next time you run it. More on modifying a transaction's bank date: #BNKMDB01.
